Grilled Shrimp with Lemon Garlic Zucchini

Ingredients:
12 large shrimp, peeled and deveined
2 medium zucchinis, sliced into thin noodles or ribbons
2 tablespoons olive oil
3 cloves garlic, minced
Juice of 1 lemon
Salt and pepper to taste
Fresh parsley, chopped (for garnish)

Instructions:
1. Start by marinating the shrimp. In a bowl, combine the shrimp with one tablespoon of olive oil, minced garlic, lemon juice, salt, and pepper. Let it sit for about 10 minutes to absorb the flavors.

2. While the shrimp is marinating, prepare the zucchini. Use a spiralizer or a vegetable peeler to create noodle-like strands of zucchini.

3. Heat a non-stick grill pan or skillet over medium-high heat. Add the remaining tablespoon of olive oil.

4. Once the oil is hot, add the marinated shrimp in a single layer. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the pan and set aside.

5. In the same pan, add the zucchini noodles. Sauté for about 2-3 minutes until just tender but still slightly crisp. Season with salt and pepper to taste.

6. Serve the grilled shrimp over the sautéed zucchini noodles, garnished with fresh parsley.
