Grilled Shrimp with Zucchini and Tomato Skewers

Ingredients
1 pound large shrimp, peeled and deveined
2 medium zucchinis, sliced into half-moons
1 cup cherry tomatoes
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Lemon wedges (for serving)
Instructions
Begin by soaking wooden skewers in water for about 10 minutes to prevent burning on the grill. If using metal skewers, skip this step.
In a large bowl, combine the shrimp, zucchini, cherry tomatoes, olive oil, minced garlic, smoked paprika, salt, and pepper. Toss everything together until the shrimp and vegetables are well-coated.
Thread the shrimp, zucchini, and cherry tomatoes onto the skewers, alternating between shrimp and vegetables for a colorful presentation.
Preheat the grill to medium-high heat. Once hot, place the skewers on the grill and cook for about 2-3 minutes per side, or until the shrimp turns pink and opaque, and the zucchinis are tender.
