Grilled Tuna with Zucchini and Tomato

Ingredients:
2 fresh tuna steaks
1 medium zucchini, sliced into rounds
1 medium tomato, diced
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon garlic powder
Salt and pepper to taste
Lemon wedges for garnish

Instructions:

1. Preheat your grill or grill pan to medium-high heat.
2. In a small bowl, combine the olive oil, dried oregano, garlic powder, salt, and pepper. Mix well.
3. Brush both sides of the tuna steaks with the olive oil mixture, making sure they are evenly coated.
4. Toss the sliced zucchini and diced tomato in the remaining olive oil mixture until well coated.
5. Place the tuna steaks on the grill and cook for about 3-4 minutes on each side, or until they reach your desired level of doneness.
6. While the tuna is grilling, add the zucchini rounds to the grill. Cook for about 2-3 minutes on each side until tender and marked. Remove the zucchini and tomatoes from the grill once cooked through.
7. Plate the grilled tuna alongside the zucchini and diced tomato.
8. Serve with lemon wedges on the side for an added burst of flavor. Enjoy your healthy and delicious dinner!
