Kale and Grilled Shrimp Salad

Ingredients:
4 cups fresh kale, chopped
1 pound large shrimp, peeled and deveined
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper, to taste
1 avocado, diced
1 small cucumber, diced
Juice of 1 lemon
Sprinkle of feta cheese (optional)
Instructions:
1. Preheat the grill or grill pan over medium-high heat.
2. In a bowl, combine the shrimp with olive oil, garlic powder, paprika, salt, and pepper. Toss to coat the shrimp evenly.
3. Place the seasoned shrimp on the grill. Cook for about 2-3 minutes on each side or until the shrimp are pink and opaque. Remove from heat and let cool slightly.
4. While the shrimp are grilling, wash and chop the kale. Place it in a large salad bowl.
5. Add the diced avocado and cucumber to the salad bowl with the kale.
6. Once the shrimp are ready, add them to the salad mixture.
7. Drizzle lemon juice over the entire salad and toss gently to combine all ingredients.
8. If using, sprinkle some feta cheese over the top before serving.
9. Serve immediately, or chill in the refrigerator for a few minutes for a refreshing take.
