1 medium head of cauliflower, cut into florets
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon smoked paprika
Salt and pepper to taste
1/4 cup tahini
2 tablespoons lemon juice
2 tablespoons water
1 clove garlic, minced
Fresh parsley, chopped for garnish

Instructions
Preheat the oven to 425 degrees Fahrenheit.

In a large mixing bowl, combine cauliflower florets, olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until the cauliflower is evenly coated with the oil and seasonings.

Spread the cauliflower in a single layer on a baking sheet. Roast in the oven for 20 to 25 minutes, or until the florets are golden brown and tender, stirring halfway through for even cooking.

While the cauliflower is roasting, prepare the tahini sauce. In a small bowl, whisk together tahini, lemon juice, water, minced garlic, and a pinch of salt. Adjust the consistency by adding more water if needed until it reaches a creamy yet pourable texture.

Once the cauliflower is done, remove it from the oven and let it cool for a few minutes.

Serve the roasted cauliflower warm, drizzled with the tahini sauce and garnish with chopped parsley.
