4 large eggs
1/2 cup bell peppers (mixed colors), diced
2 links (about 4 ounces) turkey sausage, casings removed and crumbled
1 tablespoon olive oil or cooking spray
Salt and pepper to taste
Fresh parsley or chives for garnish (optional)

Instructions:
1. Start by heating the olive oil in a non-stick skillet over medium heat. If using cooking spray, spray the pan evenly.
2. Once the oil is hot, add the crumbled turkey sausage to the skillet. Cook for about 5 minutes, stirring occasionally, until it is browned and cooked through.
3. While the sausage is cooking, crack the eggs into a bowl and whisk them until well combined. Season with a pinch of salt and pepper.
4. After the sausage is cooked, add the diced bell peppers to the skillet. Sauté for 2-3 minutes until the peppers are slightly tender.
5. Pour the whisked eggs over the turkey sausage and bell peppers in the skillet. Allow them to cook for about 1-2 minutes without stirring, then gently scramble the mixture with a spatula.
6. Continue cooking for another 2-3 minutes, or until the eggs are set to your preferred doneness.
7. Remove from heat and serve immediately. Garnish with fresh parsley or chives if desired.
