Scrambled Eggs with Diced Avocado and Salsa

Ingredients:
2 large eggs
1/4 medium avocado, diced
2 tablespoons fresh salsa (preferably low-sugar)
Salt and pepper to taste
1 teaspoon olive oil or cooking spray
Chopped fresh cilantro for garnish (optional)
Lime wedge for serving (optional)

Instructions:
1. In a small bowl, crack the eggs and whisk them until fully blended. Season with salt and pepper to taste.
2. Heat the olive oil in a non-stick skillet over medium heat. If using cooking spray, spray the skillet evenly.
3. Pour the whisked eggs into the skillet and allow them to cook for about 1 minute without stirring.
4. Gently stir the eggs with a spatula, allowing the uncooked egg to flow to the edges of the pan. Continue to stir occasionally until the eggs are softly scrambled, about 3 to 4 minutes total.
5. Remove the pan from heat. Gently fold in the diced avocado and fresh salsa until well distributed.
6. Transfer the scrambled eggs to a plate and garnish with chopped cilantro if desired. Serve with a lime wedge on the side for an optional zesty touch.
