Spicy Chicken Lettuce Wraps

Ingredients:
1 pound ground chicken
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 red bell pepper, diced
1 carrot, shredded
2 tablespoons soy sauce (low sodium)
1 tablespoon sriracha sauce (adjust to taste)
1 teaspoon fresh ginger, grated
1 teaspoon rice vinegar
Salt and pepper to taste
1 head of iceberg or butter lettuce, leaves separated
Chopped fresh cilantro for garnish
Lime wedges for serving
Instructions:
1. Heat olive oil in a large skillet over medium heat. Add the chopped onion and sauté for about 3 minutes until it becomes translucent.
2. Stir in the minced garlic and cook for an additional minute until fragrant.
3. Add the ground chicken to the skillet, breaking it apart with a spatula. Cook for 5 to 7 minutes until the chicken is cooked through and no longer pink.
4. Mix in the diced red bell pepper and shredded carrot, cooking for another 2 to 3 minutes until the vegetables are tender yet crisp.
5. In a small bowl, combine soy sauce, sriracha, grated ginger, rice vinegar, salt, and pepper. Pour this mixture over the chicken and vegetables, stirring well to coat everything evenly. Cook for another 2 minutes to allow the flavors to meld.
6. Remove from heat and let cool slightly.
7. To serve, spoon the spicy chicken mixture into the prepared lettuce leaves, garnish with chopped cilantro, and serve with lime wedges on the side. Enjoy your flavorful and healthy lunch!
