Spinach and Cheese Breakfast Burrito using Low-Carb Tortilla

Ingredients:
1 low-carb tortilla
1 cup fresh spinach, chopped
1 large egg
2 tablespoons shredded cheese (such as cheddar or mozzarella)
1 teaspoon olive oil
Salt and pepper to taste
Optional: hot sauce or salsa for serving
Instructions:
1. In a non-stick skillet, heat olive oil over medium heat.
2. Add the chopped spinach to the skillet and sauté for about 2-3 minutes until wilted.
3. In a small bowl, crack the egg and beat it with a fork. Season with salt and pepper.
4. Pour the beaten egg over the spinach in the skillet, stirring gently to combine. Cook for another 2-3 minutes until the egg is fully cooked.
5. Remove the skillet from heat and stir in the shredded cheese until melted.
6. Lay the low-carb tortilla flat on a plate. Spoon the spinach and cheese mixture onto the center of the tortilla.
7. Fold the sides of the tortilla inwards, then roll it up tightly from the bottom to form a burrito shape.
8. If desired, return the burrito to the skillet for 1-2 minutes on each side until lightly toasted.
9. Serve warm with optional hot sauce or salsa if desired.
