Ingredients
2 boneless, skinless chicken breasts
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
2 tablespoons cream cheese, softened
1 clove garlic, minced
1 tablespoon olive oil
1/2 teaspoon dried oregano
Salt and pepper to taste
Cooking spray or additional olive oil for greasing

Instructions
Preheat the oven to 375 degrees Fahrenheit.

In a mixing bowl, combine the chopped spinach, feta cheese, cream cheese, minced garlic, dried oregano, salt, and pepper. Mix until the ingredients are well combined.

Using a sharp knife, create a pocket in each chicken breast by cutting horizontally, being careful not to cut all the way through.

Stuff each chicken breast pocket with the spinach and feta mixture, pressing gently to seal the filling inside.

Heat a skillet over medium heat and add olive oil. Once hot, place the stuffed chicken breasts in the skillet and sear for about 3 to 4 minutes on each side, until golden brown.

Lightly grease a baking dish with cooking spray or additional olive oil. Transfer the seared chicken breasts to the baking dish.

Bake in the preheated oven for 25 to 30 minutes, or until the internal temperature of the chicken reaches 165 degrees Fahrenheit.

Remove from the oven and let the chicken rest for a few minutes before slicing. Serve warm and enjoy your nutritious, diabetic-friendly meal.
