2 large chicken breasts
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
1 clove garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
1 teaspoon dried oregano
1 teaspoon lemon juice

Instructions:

1. Preheat the oven to 375 degrees Fahrenheit.

2. In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about one minute until fragrant.

3. Add the chopped spinach to the skillet and cook until wilted, approximately 2 to 3 minutes. Stir occasionally.

4. In a mixing bowl, combine the cooked spinach, crumbled feta cheese, oregano, lemon juice, salt, and pepper. Mix well to combine all ingredients into a cohesive filling.

5. Place the chicken breasts on a cutting board. Using a sharp knife, carefully create a pocket in each chicken breast by cutting horizontally without slicing all the way through.

6. Stuff each chicken breast with the spinach and feta mixture, ensuring even distribution.

7. Secure the openings with toothpicks if necessary to keep the filling from escaping during cooking.

8. Place the stuffed chicken breasts in a baking dish. Season the top with additional salt and pepper if desired.

9. Bake in the preheated oven for 25 to 30 minutes or until the internal temperature reaches 165 degrees Fahrenheit and the chicken is cooked through.

10. Remove the chicken from the oven and let it rest for 5 minutes before slicing.

11. Serve warm, optionally garnished with extra spinach or a wedge of lemon for added flavor.
