Spinach and Feta Stuffed Zucchini Boats

2 medium zucchinis
2 cups fresh spinach, chopped
1 cup feta cheese, crumbled
1/4 cup onions, finely chopped
2 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon dried oregano
Salt and black pepper to taste
Fresh parsley, for garnish

Instructions
Preheat the oven to 375 degrees Fahrenheit.

Cut the zucchinis in half lengthwise and scoop out the center with a spoon to create a hollow space for the filling. Be careful not to cut through the skin.

In a skillet, heat the olive oil over medium heat. Add the chopped onions and sauté until they become translucent, about 3 to 4 minutes.

Add the minced garlic and chopped spinach to the skillet. Cook until the spinach is wilted, about 2 to 3 minutes.

In a mixing bowl, combine the sautéed spinach and onion mixture with crumbled feta cheese, dried oregano, salt, and black pepper. Mix well until all ingredients are evenly distributed.

Place the zucchini halves on a baking sheet lined with parchment paper. Fill each zucchini boat generously with the spinach and feta mixture.

Bake in the preheated oven for 20 to 25 minutes, or until the zucchinis are tender and the filling is heated through.

Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
