Instructions:
1. Begin by breaking the eggs into a bowl. Whisk them until well combined, then season with a pinch of salt and pepper.
2. Heat the olive oil in a non-stick skillet over medium heat until it shimmers.
3. Add the chopped spinach to the skillet and sauté for 1-2 minutes, just until wilted.
4. Pour the whisked eggs over the spinach in the skillet, tilting the pan to ensure the eggs spread evenly.
5. Cook for 1-2 minutes, allowing the eggs to set around the edges.
