Spinach and Ricotta Roll-Ups using Low-Carb Tortilla

Ingredients:
2 low-carb tortillas
1 cup fresh spinach, chopped
1/2 cup ricotta cheese
1/4 cup shredded mozzarella cheese
1 tablespoon olive oil
1 clove garlic, minced
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Fresh herbs (basil or parsley), for garnish

Instructions:
In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant.
Add the chopped spinach to the skillet and cook until wilted, about 2 minutes. Season with salt, pepper, and red pepper flakes if using.
Remove the skillet from heat and let the mixture cool slightly.
In a bowl, combine the sautéed spinach with ricotta cheese and half of the shredded mozzarella cheese, mixing well.
Lay out a low-carb tortilla on a clean surface and spoon a portion of the spinach and ricotta mixture onto the center of the tortilla.
Roll the tortilla tightly from the bottom up, tucking in the sides as you go to create a wrap. Repeat this step for the second tortilla.
In the same skillet, place the roll-ups seam side down and cook for 2-3 minutes until golden brown.
Carefully flip the roll-ups and cook the other side for another 2-3 minutes until the cheese is melted and the tortillas are crispy.
Remove from heat, slice each roll-up into bite-sized pieces, and sprinkle with remaining mozzarella cheese and fresh herbs for garnish.
Serve warm and enjoy a delicious, low-carb breakfast that is diabetic-friendly.
