Stuffed Bell Peppers with Ground Turkey

Ingredients
4 large bell peppers (any color)
1 pound ground turkey
1 medium onion, finely chopped
2 cloves garlic, minced
1 cup diced tomatoes (canned or fresh, preferably no-salt-added)
1 teaspoon Italian seasoning
1 teaspoon paprika
Salt and pepper to taste
1 cup spinach, chopped
1 cup shredded mozzarella cheese (optional)
Olive oil for cooking

Instructions

Preheat the oven to 375 degrees Fahrenheit.

Slice the tops off the bell peppers and remove the seeds and membranes. Set aside.

In a large skillet, heat a drizzle of olive oil over medium heat. Add the chopped onion and cook for about 3 to 4 minutes until softened.

Add the minced garlic and ground turkey to the skillet. Cook for about 5 to 7 minutes, stirring frequently, until the turkey is no longer pink.

Stir in the diced tomatoes, Italian seasoning, paprika, salt, and pepper, cooking for another 3 to 5 minutes until well combined.

Add the chopped spinach to the mixture and cook for an additional 2 minutes until the spinach wilts.

Remove the skillet from the heat and divide the turkey mixture evenly among the bell peppers, packing it in tightly.

If using, sprinkle shredded mozzarella cheese on top of the stuffed peppers.

Place the stuffed peppers in a baking dish and add a splash of water to the bottom to create steam. Cover the dish with aluminum foil and bake for 25 minutes.

After 25 minutes, remove the foil and bake for an additional 5 minutes, or until the peppers are tender and the cheese is melted (if used).

Once done, remove from the oven and let cool for a few minutes before serving. Enjoy your healthy stuffed bell peppers!
