Tomato and Avocado Salad with Olive Oil

Ingredients
2 ripe avocados, diced
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, thinly sliced
1/4 cup fresh basil leaves, torn
2 tablespoons extra virgin olive oil
1 tablespoon lemon juice
Salt and pepper to taste
Instructions
Start by preparing all the ingredients. Dice the avocados, halve the cherry tomatoes, and dice the cucumber. Thinly slice the red onion and tear the basil leaves.
In a large bowl, gently combine the diced avocados, cherry tomatoes, cucumber, and red onion.
Add the fresh basil to the bowl.
In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper.
Pour the dressing over the salad and toss gently to combine, ensuring the avocados remain intact.
Taste and adjust seasoning if needed before serving.
