Ingredients:
2 medium zucchinis, thinly sliced
1 cup crumbled feta cheese
1/2 cup grated Parmesan cheese
3 large eggs
1/4 cup unsweetened almond milk
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and black pepper to taste
Fresh parsley, chopped (for garnish)
Instructions:
Preheat your oven to 375 degrees Fahrenheit.
In a large mixing bowl, combine the eggs and almond milk. Whisk together until well blended.
Add the minced garlic, dried oregano, salt, and pepper to the egg mixture. Stir until the seasonings are evenly distributed.

After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the top is golden brown and set.
