Instructions
Preheat the oven to 375 degrees Fahrenheit.

In a large bowl, whisk together the eggs and heavy cream until well combined. Season with salt and pepper.

In an oven-safe skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Add the grated zucchini to the skillet and cook for about 3 to 4 minutes, stirring occasionally, until it is slightly softened and has released some moisture.

Pour the egg mixture over the zucchini, ensuring it distributes evenly. Sprinkle the crumbled goat cheese on top.

Cook on the stovetop for 2 to 3 minutes until the edges start to set.

Transfer the skillet to the preheated oven and bake for 15 to 18 minutes, or until the frittata is set in the center and lightly golden on top.

Remove from the oven and let it cool for a few minutes before slicing.

Garnish with fresh basil leaves and serve warm or at room temperature.

Enjoy this nutritious frittata as a delicious, low-carb, and sugar-free option for lunch.
