1 pound ground beef (lean)
3 medium zucchinis, sliced
1 medium onion, diced
2 cloves garlic, minced
1 cup bell peppers, diced (any color)
1 cup marinara sauce (sugar-free)
1 cup shredded mozzarella cheese (part-skim)
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
Olive oil for cooking

Instructions

1. Preheat the oven to 350 degrees Fahrenheit.

2. In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

3. Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, approximately 5-7 minutes. Drain any excess fat if necessary.

4. Stir in the diced bell peppers, marinara sauce, oregano, basil, salt, and pepper. Let the mixture simmer for about 5 minutes until the flavors meld together.

5. In a lightly greased baking dish, arrange a layer of sliced zucchini on the bottom. Spoon half of the ground beef mixture over the zucchini. Add another layer of zucchini followed by the remaining ground beef mixture.

6. Finish with a final layer of zucchini on top and sprinkle the shredded mozzarella cheese evenly across the surface.

7. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

8. Remove the casserole from the oven and let it cool for a few minutes before serving.
