Zucchini and Ground Beef Stir-Fry

Ingredients
1 pound lean ground beef
2 medium zucchinis, sliced into half-moons
1 bell pepper, sliced (any color you prefer)
1 small onion, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
2 tablespoons soy sauce (low sodium)
1 teaspoon ground ginger
Salt and pepper to taste
Fresh parsley or green onions for garnish
Instructions
1. Start by heating one tablespoon of olive oil in a large skillet over medium heat.
2. Add the ground beef to the skillet, breaking it up with a spatula. Season with salt and pepper. Cook for about 5-7 minutes until browned and cooked through.
3. Once the beef is cooked, remove it from the skillet and set it aside on a plate.
4. In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion, bell pepper, and minced garlic. Sauté for about 2-3 minutes until softened.
5. Add the sliced zucchini to the skillet and continue to sauté for another 5 minutes, or until the zucchini is just tender but still crisp.
6. Stir in the cooked ground beef, soy sauce, and ground ginger. Mix everything well and cook for another 2-3 minutes to combine the flavors.
7. Taste and adjust seasoning if necessary. Remove from heat and garnish with fresh parsley or sliced green onions before serving.
