Zucchini and Turkey Sausage Breakfast Skillet

Ingredients:
1 medium zucchini, finely chopped
2 links of turkey sausage, sliced (be sure to choose low-sodium and no sugar)
1 tablespoon olive oil
1/2 cup bell pepper, diced (any color)
1/4 cup onion, diced
2 large eggs
Salt and pepper to taste
Fresh parsley or chives for garnish (optional)
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the diced onions and bell peppers to the skillet. Sauté for about 3-4 minutes until they begin to soften.
3. Stir in the sliced turkey sausage and cook for an additional 3-4 minutes until the sausage is browned and cooked through.
4. Add the chopped zucchini to the skillet, mix well, and cook for about 5 minutes, stirring occasionally until the zucchini is tender.
5. Make two small wells in the mixture and crack an egg into each well. Cover the skillet with a lid and cook for about 3-4 minutes for soft yolks or longer if you prefer well-done eggs.
6. Season with salt and pepper to taste.
7. Remove from heat, garnish with fresh parsley or chives if desired, and serve immediately.
