Zucchini and Turkey Sausage Stir-Fry

Ingredients
2 medium zucchini, sliced into half-moons
1 pound turkey sausage, sliced
1 red bell pepper, sliced
1 small onion, thinly sliced
2 cloves garlic, minced
2 tablespoons olive oil
1 teaspoon Italian seasoning
Salt and pepper to taste
Fresh parsley, chopped for garnish
Instructions
Start by heating olive oil in a large skillet over medium heat. Add the sliced turkey sausage and cook for about 5 minutes, stirring occasionally until browned.
Once the sausage is nicely browned, add the sliced onion and minced garlic to the skillet. Sauté for an additional 3 minutes until the onion becomes translucent and garlic is fragrant.
Add the sliced zucchini and red bell pepper to the skillet. Sprinkle in the Italian seasoning, salt, and pepper. Stir well to combine all ingredients.
Cook for an additional 5 to 7 minutes, stirring occasionally, until the zucchini is tender but still firm and the bell pepper is slightly softened.
