Zucchini Lasagna Roll-Ups with Ricotta

Ingredients
2 medium zucchinis
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 cup marinara sauce (no added sugar)
1 egg
1 teaspoon dried basil
1 teaspoon dried oregano
Salt and pepper to taste
Fresh basil for garnish (optional)
Instructions
1. Preheat the oven to 375°F.
2. Using a mandoline or a sharp knife, slice the zucchinis lengthwise into thin strips, about 1/8 inch thick. Place the strips on a clean kitchen towel, sprinkle with a little salt, and let them sit for about 10 minutes to draw out excess moisture.
3. In a mixing bowl, combine the ricotta cheese, half of the mozzarella cheese, the grated Parmesan cheese, the egg, dried basil, dried oregano, salt, and pepper. Mix until well combined.
4. Pat the zucchini strips dry with another clean kitchen towel to remove excess moisture.
5. Spread a thin layer of marinara sauce on the bottom of a baking dish.
6. Take one zucchini strip and place about 2 tablespoons of the ricotta mixture at one end. Roll the strip tightly to form a roll-up. Repeat with the remaining strips and filling.
7. Arrange the zucchini roll-ups in the baking dish, seam side down. Once all roll-ups are in the dish, top with the remaining marinara sauce and sprinkle the rest of the mozzarella cheese on top.
8. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
9. Remove the foil and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
10. Let the dish cool for a few minutes before serving. Garnish with fresh basil if desired.
