2 medium zucchinis
8 ounces large shrimp, peeled and deveined
2 tablespoons olive oil
4 cloves garlic, minced
1 lemon, juiced and zested
Salt and pepper to taste
Fresh parsley, chopped for garnish

Instructions
1. Start by making the zucchini noodles. Use a spiralizer or vegetable peeler to create thin noodles from the zucchinis. Set them aside on a plate.

2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.

3. Add the shrimp to the skillet and season with salt and pepper. Cook the shrimp for about 2-3 minutes per side, or until they are pink and opaque.

4. Once the shrimp are cooked, add the zucchini noodles to the skillet. Pour in the lemon juice and lemon zest, and toss everything together gently to combine. Cook for an additional 1-2 minutes, just until the zucchini noodles are slightly softened.

5. Adjust seasoning with salt, pepper, and red pepper flakes if desired. Remove from heat.

6. Serve the zucchini noodles and shrimp hot, garnished with fresh parsley.
