Zucchini Noodles with Tomato Basil Sauce and Grilled Chicken

Ingredients
2 medium zucchini
1 cup cherry tomatoes, halved
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and pepper to taste
1/4 cup fresh basil, chopped
2 boneless, skinless chicken breasts
1 tablespoon lemon juice

Instructions
Begin by preparing the zucchini noodles. Use a spiralizer or a julienne peeler to create long, thin strands of zucchini. Set aside.

Next, heat 1 tablespoon of olive oil in a skillet over medium heat. Add the minced garlic and sauté for about one minute until fragrant.

Add the halved cherry tomatoes and oregano to the skillet. Season with salt and pepper. Cook for about five to seven minutes until the tomatoes have softened and released some juices. Remove from heat and stir in the fresh basil.

While the sauce is cooking, preheat a grill or grill pan over medium-high heat. Brush the chicken breasts with the remaining olive oil and drizzle with lemon juice. Season with salt and pepper. Grill the chicken for six to eight minutes on each side or until fully cooked and the internal temperature reaches 165 degrees Fahrenheit. Let the chicken rest for a few minutes before slicing.

In a separate pot, lightly steam the zucchini noodles for about two to three minutes until just tender.

To serve, place a generous portion of the zucchini noodles on each plate and top with the warm tomato basil sauce. Sliced grilled chicken can be arranged on the side or placed on top of the noodles. Garnish with extra basil if desired.
